Fit & Fun One-Pot Quinoa Delight

- 200g quinoa
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 150g cherry tomatoes, halved
- 1 can (400g) chickpeas, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 500ml vegetable broth
- Fresh parsley for garnish
Instrukcje:
- Rinse the quinoa under cold water to remove any bitterness.
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and minced garlic, sauté until soft and fragrant.
- Stir in diced red bell pepper and sliced zucchini, cook for 5 minutes.
- Add cherry tomatoes, chickpeas, cumin, smoked paprika, salt, and pepper. Stir well to combine.
- Pour in vegetable broth and bring to a boil.
- Add rinsed quinoa, reduce heat to low, cover, and simmer for 20 minutes or until quinoa is cooked and liquid is absorbed.
- Fluff the quinoa with a fork and garnish with fresh parsley before serving.
