  • 2 tablespoons olive oil 🫒
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced 🥕
  • 2 celery stalks, diced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 can (400g) diced tomatoes 🍅
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 liter vegetable broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instrukcje:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sauté until the onion is translucent.
  3. Stir in the diced carrots, celery, red bell pepper, and zucchini. Cook for about 5 minutes until the vegetables start to soften.
  4. Pour in the diced tomatoes with their juice, then add the oregano and basil. Stir well.
  5. Add the vegetable broth, bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.
