- 2 tablespoons olive oil 🫒
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced 🥕
- 2 celery stalks, diced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 can (400g) diced tomatoes 🍅
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 liter vegetable broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instrukcje:
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sauté until the onion is translucent.
- Stir in the diced carrots, celery, red bell pepper, and zucchini. Cook for about 5 minutes until the vegetables start to soften.
- Pour in the diced tomatoes with their juice, then add the oregano and basil. Stir well.
- Add the vegetable broth, bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
