Winter Wonderland Vegetable Stew
A hearty and healthy winter vegetable stew, perfect for warming up on cold days. This dish is packed with seasonal vegetables and is both vegetarian and low in calories.

- 2 tablespoons olive oil 🫒
- 1 large onion, chopped
- 2 cloves garlic, minced 🧄
- 3 carrots, sliced
- 2 parsnips, sliced
- 2 potatoes, diced 🥔
- 1 small butternut squash, peeled and cubed
- 1 can of diced tomatoes (400g) 🍅
- 1 liter vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish) 🌿
Instrukcje:
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sauté until the onion is translucent, about 5 minutes.
- Stir in the sliced carrots, parsnips, and diced potatoes. Cook for another 5 minutes, stirring occasionally.
- Add the cubed butternut squash and can of diced tomatoes, including the juice.
- Pour in the vegetable broth, then add the dried thyme and rosemary. Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for about 30 minutes, or until the vegetables are tender.
- Taste and adjust seasoning as needed.
- Serve hot, garnished with freshly chopped parsley.
