Winter Wonderland Vegetable Stew

A hearty and healthy winter vegetable stew, perfect for warming up on cold days. This dish is packed with seasonal vegetables and is both vegetarian and low in calories.

  • 2 tablespoons olive oil 🫒
  • 1 large onion, chopped
  • 2 cloves garlic, minced 🧄
  • 3 carrots, sliced
  • 2 parsnips, sliced
  • 2 potatoes, diced 🥔
  • 1 small butternut squash, peeled and cubed
  • 1 can of diced tomatoes (400g) 🍅
  • 1 liter vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish) 🌿

Instrukcje:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sauté until the onion is translucent, about 5 minutes.
  3. Stir in the sliced carrots, parsnips, and diced potatoes. Cook for another 5 minutes, stirring occasionally.
  4. Add the cubed butternut squash and can of diced tomatoes, including the juice.
  5. Pour in the vegetable broth, then add the dried thyme and rosemary. Season with salt and pepper to taste.
  6. Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for about 30 minutes, or until the vegetables are tender.
  7. Taste and adjust seasoning as needed.
  8. Serve hot, garnished with freshly chopped parsley.
